I'm having trouble using the plugin,can you help me figured out on how to use the plugin.
I don't know how to use the short code and whistlist can you help me on this.

You can use the metabox on the Posts and Page pages to add the shortcode.
Enter your wishlist ID, click show items and select the options. Click send to editor and you're done

what is a shortcode that I can use if I want to display posts from one specific category on the page (not in a sidebar)

There's no shortcode for the Extended Categories plugin, as you mentioned shortcode I moved it to the AVH Amazon plugin.
